Jicama Substitute – Healthy French Fries with Some Spice

One of the biggest struggles for me with this keto thing has been giving up ALL the carbs! I love carbs – bread, potatoes, pasta — YUMMM! Therefore, I’ve made it my mission to find tasty substitutes for each of these. Everyone loves a cheeseburger and fry meal, but that’s a ton of carbs! I have a little secret for you though. Cheeseburger, add the toppings, rid the bun and it tastes just as good! Second tip, jicama! I discovered these delicious fries – jicama fries to be exact. And they are easier to make than homemade potato fries. Best part is only 10 grams of carbs and they still have the fry crunch!

Ingredients

1 lb jicama (peeled and sliced)
3 tbs olive oil
1 tsp chili powder
1-2 tsp salt, to taste
1/2 tsp garlic powder
1/2 tsp onion powder
dash of paprika
dash of black pepper

Instructions

  1. Preheat oven to 400 degrees
  2. Peel & slice jicama into french fry shapes.
  3. Coat jicama with olive oil in a small bowl.
  4. Toss jicama in seasoning mix until evenly coated.
  5. Spread in a single layer on a baking sheet and bake for 40 minutes, flipping half way through.
  6. Remove from over when done. Let cool for a 3-4 minutes before serving.

Note: Baking time may vary by oven. If the fries aren’t crisped to your liking, continue to bake them. Check every 3-4 minutes.
