
Quick Meal: Sausage and Vegetables
Most of my meals consist of chicken as my protein. I’m not a big red meat eater, and for some reason I’m too chicken (no pun intended) to cook fish. As I’m cleaning out the cupboard I stumbled upon this great, quick, one pan sausage meal! It takes less than 30 minutes to cook and has easy clean up, which I am all about on those busy weeknights. It’s also great because it serves 4, leaving PLENTY of leftovers. What I also love about this recipe is you can use any veggies that are in your fridge. Personally, I like the meal with green beans and broccoli, but you could add mushrooms, red potatoes if carbs are allowed in your diet, etc. This is a super easy and healthy dinner that is loaded with flavor.
It’s this easy – If your sausage isn’t precooked – I buy precooked to make life easy – cook your sausage. Dice your veggies. Combine your sausage and veggies on a pan with olive oil and herbs on foil or parchment paper. Bake, and enjoy!
If your diet is carb friendly, add brown rice, quinoa or other great side dishes!

Quick Meal: Andouille Sausage and Vegetables
Adapted from Chelsea’s Messy Apron
Ingredients

- 1 large head of broccoli (~ 1 and 1/2 cups)
- 3/4 pound green beans
- 1 and 1/2 cups chopped bell peppers
- 9 ounces smoked sausage – I use chicken
- 6 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1 tablespoon dried oregano
- 1 tablespoon dried parsley
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Parmesan Cheese
Directions
- Preheat the oven to 400 degrees F.
- Line a large sheet pan with foil or parchment paper.
- Chop your veggies of choice – green bean ends, broccoli and peppers diced.
- Place all the veggies and sausage on a sheet pan. Pour the olive oil and all the spices on top. Toss to evenly coat all the veggies and meat.
- Bake 15 minutes, remove from the oven and stir all the veggies.
- Return to the oven and bake for another 10-15 minutes or until vegetables are crisp tender and sausage is browned.
- Sprinkle freshly grated Parmesan cheese over the veggies and sausage as soon as they come out of the oven.
- Enjoy with rice or quinoa if desired.
